These jumbo chocolate sandwich cookies are just like what you would get at a fancy bakery. Delicious chocolate cookies sandwiched together with a luscious vanilla frosting . . . yum! We went for an easy store-bought frosting here, but feel free to make your own. Also, these cookies get better with age. Make them the night before and let the frosted cookies sit overnight. They soften up beautifully, so the frosting won't squish out.
