A decadent dessert made of layers of flaky pastry stacked with dulce de leche, Torta Chilena is simultaneously rich, crunchy, smooth, and tangy. It's believed that Chilean immigrants brought their mil hojas (“1,000 layers”) pastry tradition to Costa Rica, where it evolved into the beloved celebration cake it is today. This version, from contributor Emilia Bermúdez, is coated in a fluffy and slightly tangy crème fraîche whipped topping, which balances the caramel-like sweetness of the dulce de leche and offers a textural counterpoint to the gooey filling and crunchy pastry. Joyful and indulgent, this dessert is best enjoyed with a cup of black coffee and good company.
