A yule log or bûche de Noël is a joyful and impressive holiday dessert that is actually quite easy to make and decorate–we promise. Yes, when yule log-making you must first bake a Swiss or jelly roll, a cake that is filled with cream and rolled into a cylinder, and we get it: rolling up a cake without cracking it sounds scary and hard. But our recipe is simpler than ones you may have previously stumbled upon and doesn't require separating eggs or anything fussy like that. Moreover, we have you bake the cake in a regular old cookie sheet with sides, as opposed to the fussy “jelly roll” pan that is so often required. And we hold your cocoa-dusted hand through all the tricky parts–such as removing the cake from the pan and rolling it up with a towel pre-filling--to give it a little “muscle memory,” as it were. Plus, we share all of our slicing and decorating tips, too, so you'll be bûche'ing like a pro in no time. Finally, if your cake does crack when you roll it up, don't worry! The gorgeous ganache “bark” that you will be spreading over your cake is like your woodland fairly godmother, magically hiding any and all cracks like nobody's business.
