When we first conceptualized what we wanted in a good apple pie filling, it quickly became clear we had high expectations. We wanted it to be sweet, but not cloying. Tart, but not sour. Gooey, but not mushy. Firm, but not raw. In other words, this recipe had a lot to live up to. After many trials and compost containers full of apple peels, we think it's safe to say we've come up with a recipe that checks every box.
