Also known as Swedish Dreams or Vanilla Dreams, these cookies are crispier, crunchier, and airier than any cookie made with baking powder or baking soda. The secret is baker's ammonia, a leavening agent used in many old-fashioned cookies and crackers. While you may have to mail-order this specialty ingredient or seek it out at your local pharmacy, the effort is worth it: These cookies' effervescent texture can't be replicated exactly with baking powder alone.
