Description
Inspired by a technique that originated with European baker Yohan Ferrant, this is as close to hands-free as you get with sourdough. While you can absolutely use fed starter as the base, it's not imperative; the wonderfully crusty, chewy, flavorful bread is a great use for starter you might otherwise discard during its regular feeding.
