These sweet, fluffy, coiled buns originated on the Spanish island of Mallorca, where they are known as ensaïmadas; when they made their way to Puerto Rico in the early twentieth century, they got their commemorative name. At Milena Pagán's bakery Little Sister in Providence, Rhode Island, she dusts them very liberally with confectioners' sugar and serves them with jam like a morning pastry.
