One of the signature items at Justin Gaspar's San Diego bakery pop-up Bread & Butter, these milk bread buns are filled with a dense, creamy custard made by mixing bibingka with pastry cream and topped with cracked caramel. The purple color of the centers come from ube extract, which replicates the flavor of the beloved Filipino purple yam.
