The secret ingredient to this tangy version is a couple of teaspoons of prepared horseradish. It gives the dressing a subtle kick that is intensely craveable. I strongly recommend using a good quality blue cheese (after all, that's the flavor you want to taste at the forefront of the dressing) likeMaytag orPoint Reyes, but you want a blue cheese that's not too creamy to crumble because this dressing is all about big ol' chunks of cheese in every bite.
