Meherwan Irani's chai inspo comes from the street-chai popular to his hometown of Maharashtra, India. Here, chai is often “cheffed up” by adding a variety of spices, like in Masala Chai. It's more common, however, to find chai made with just cardamom or ginger. Chai Pani's chai uses both—just enough of each to create a background of balanced flavours that allow notes of ginger and cardamom to shine through.
