Crispy hash brown patties are the surprising stars in these hearty sheet pan BEC breakfast sandwiches for a crowd. Instead of cooking each component separately, we place the hash brown patties on a sheet pan, surround them with beaten eggs and add lots of Cheddar, pepper Jack cheese, bell peppers and bacon, of course. Another sheet pan toasts the bread and once the eggs are nice and fluffy, the filling is easy to cut into squares and make into sandwiches. Feel free to play around with the flavor combinations to vary the cheese, veggies, meat and bread based on what you like or what's in your fridge. No matter what you choose, you'll have loaded cheesy egg sandwiches for nine people on the table with minimal effort and clean up.
